Ingredients:
- 9 natural plain crêpes
- Smoked Italian ham
- 300 grams of spinach
- 2 ripe tomatoes
- 3 scoops of mozzarella
- 1 garlic clove
- 2 tablespoons toasted pine nuts
- 60g grated parmesan cheese
- 200g Skyr
- Basil 2 full handfuls
- Pepper and salt
- 4 tablespoons Olive oil
- Pepper and salt

Preparation:
- Cut the Italian ham into thin strips and fry until crispy in a non-stick pan
- Add the spinach and let it simmer with the lid on. Once the spinach is soft, let it simmer until the liquid has evaporated.
- Season with pepper
- Cut the tomatoes and mozzarella into pieces
Pesto:
- Blend the garlic with the toasted arrow nuts, Parmesan cheese, olive oil and basil in the blender. Season with some pepper
- Spoon the pesto through the skyr, season with some more pepper if desired.
- Spoon the spinach and ham mixture onto the crêpe
- Sprinkle the mozzarella and tomato on top
- Fold up the crêpe as shown and serve with a skewer and a spoonful of Skyr pesto.
